Recipe for Badshahi Sheekh
I know you must be wondering what has tandoor got to do with vegetarian food. Tandoor or food cooked in clay oven or charcoal has a rich history. Initially only meat was associated with this term but India being a predominantly vegetarian country has excelled in vegetarian tandoor as well. Kababs are a food lover’s delight. They have a wonderful smoky flavor which enhance their rich taste even further.
Vegetarian food is healthy and tasty too. Sheekh kababs are very popular appetizers.
They are juicy rolls of mixed vegetables seasoned with spices and cooked on skewers in tandoor. Why don’t you try this out at home? It is really easy and you can surprise your guests with your culinary skills as well.
It is not only tasty but healthy as well. It combines the goodness and nutrition of all the seasonal mixed vegetables. We use the freshest nutritious vegetables like carrots, french beans and green peas We mince them all together and add them to mashed potatoes. You may add grated cottage cheese also if you like. To bring out the flavor in the dough, we add garam masala powder, dried mango powder and salt. We add some freshly and thinly diced green chilies and a few garlic cloves.
The dried mango powder also known as amchur powder helps give the dough a tangy and sour taste. You can use either cornflour or gram flour also known as besan as a binding agent to bind the dough. Now what makes the sheekh badshahi, you may ask? The answer is almonds and cashew nut. After their addition to the otherwise humble sheekh kabab, the taste becomes much more flavorful. This rich taste imparts it the name of badshahi or royal.
The dough is then shaped into small balls , flattened and placed onto bamboo skewers. Then we place the skewers inside the hot tandoor for grilling. The skewers are rotated so that all the sides are perfectly cooked. Care should be taken so that that flattened dough is neither too thick nor too thin. In case you want to try this out at home and don’t have tandoor, please don’t panic.
You can shallow fry them in a non stick pan as well. Indian food and tandoor dishes are famous worldwide for their spiciness and smoky flavor.
